Recipe: Chicken Delight

Thursday, January 6, 2011

Oh my gosh. I've mentioned before that I'm obsessed with this blog called Fly Through Our Window . Darby (the author), has the best recipes AND a cute house so I'm always looking through her posts. I stole this recipe from her and it was SO good, I thought I'd share it with you!

Bryan (a.k.a The Man Who Hates Vegetables) even loved this recipe--and it's loaded with veggies. He ate his and what I couldn't finish of mine too. Here's how to make it:

Ingredients: (Makes 4 servings)

-1 zucchini, sliced
-1 yellow squash, sliced
-2 tomatoes, sliced
-Seasoning salt of your choice (I used some sort of Greek all purpose salt that I found at Wal-Mart, but I imagine garlic salt would be great too)
-LOTS of shredded mozzarella cheese
-1 bottle of spaghetti sauce (I used Prego Tomato and Basil....yum!)
-4 chicken breasts

Preheat your oven to 350 degrees. Season chicken breasts with seasoning salt and place on large aluminum foil squares. Pile on the sliced veggies.

YUM.

Pour spaghetti sauce over chicken and veggies. Pile on the cheese (seriously, pile it on, I thought I put a lot on and I ended up putting on MORE once they were cooked).

It already looks good!

Place another foil square over the chicken and then pinch the sides of the top and bottom foils together so that it is completely sealed. Leave some room at the top so the cheese doesn't stick to it when it melts!

Place on baking sheet and bake 45 minutes-1 hour.

Enjoy the deliciousness haha!!

Doesn't it look SO good? You can find the original version of the recipe HERE (I think she explains it better than I did if you're confused!)

That's it for now!
